INGREDIENTS:

1 Cup Nutty Cajun Pecan Meal

1 Cup Chopped Pecans toasted

3 cups uncooked long grain white rice

¼ cup Sweet bell peppers

2 T Chopped shallot
-
1 tbsp. minced garlic

2 tbsp. soy sauce
-
6 1/2 cups water
-
2 tbsp. of butter
-
*dash of paprika on top for taste
Toast Chopped Pecans for 5 minutes in a 325 degree oven.
Melt butter and add onions,shallot, garlic and peppers in a large sauce pot.
Stir over medium heat until fragrant. Add water & soy sauce.
Bring water to a boil then add rice; return to a boil.
Reduce heat to low; cover and simmer for 25 minutes or until rice is tender.
Remove from heat.
Stir in Pecan meal and toasted pecans.
Let stand 5 minutes.
Fluff with fork before serving.
Dash with paprika and enjoy.
